Cheesy Tomato Pie with Bacon
Tomato Pie is all the rage this summer. I had never heard of it until 2020 but I’m glad it’s making a come back because it’s delicious! I searched for recipes and couldn’t quite decide which one I liked best, so I decided to combine several of them into one. My cousin swears by this Paula Dean recipe. Then I found this Easy Italian Tomato Pie and I loved all the cheeses. I wanted to make this more of a meal and found that I wasn’t the only one who thinks bacon would make a great addition. After looking at those recipes I went totally off script and made my own.
And here’s how it came out!
I will definitely be making this again, and soon! It’s probably my most favorite thing I’ve made this year.
Now, about that tomato pie. Here’s my recipe.
Cheesy Tomato Pie with Bacon
Ingredients
- 1 pie crust
- 6 slices bacon, cooked
- 1/3 cup mayonnaise
- 10 leaves fresh basil
- 1/4 tsp onion powder
- 2 tomatoes, sliced
- 4 ounces mozzarella cheese ball, sliced
- 4 ounces fontina cheese, sliced
- 1/4 cup Parmesan cheese, grated
- 1/4 cup Asiago cheese, grated
- to taste salt & pepper
Instructions
- Preheat oven to 350.
- Thaw pie crust.
- Layer bottom of pie crust with mozzarella cheese then bacon.
- Combine mayo and onion powder and spread over top of the bacon.
- Add a layer of basil then slices from one tomato.
- Cover tomatoes with fontina cheese and then top with another layer of tomatoes.
- Add salt & pepper to taste preference
- Top with grated cheeses.
- Bake at 350 for 30 minutes or until cheese turns slightly brown on top.
Notes
Honestly, I meant to add sauteed onions to this recipe but I forgot, hence the onion powder. I also strongly considered mixing some balsamic vinegar into the mayo. I may try that next time! Garlic would also be a great addition.
